Recipe of the Month

September update : I know, I know.... I am behind on this.....but I had to clean my house for my sister's visit and then she was here visiting.....I'll be posting the Sept recipe soon!!

                                                         Best Ever Banana Bread

Preheat oven to 350

2 cups all purpose flour
1 Tsp baking soda
1 Tsp baking powder
1 Tsp salt (less is ok if you don't like to use salt)
1/2 cup (1 stick) butter or margarine, softened
1 cup sugar
2 eggs
1 Tsp vanilla
3-4 medium size mashed bananas - the riper, the better. Close to overripe, the best!
1/2 cup milk
chopped walnuts or pecans - optional
Cinnamon

Grease and flour 2 loaf pans. Combine flour, baking soda, baking powder and salt in medium size bowl. Set aside.
Beat together butter and sugar in medium bowl until light colored. Beat in eggs - ONE at a time. Add vanilla. Add flour mixture alternately with bananas and milk. Add cinnamon. Add nuts (optional).
Pour batter into prepared pans and bake in preheated oven  for 1 hour 20 minutes or until knife inserted in center comes out clean. (If top browns too quick, you'll need to cover with tin foil.)
Cool bread in pan on wire rack 10 minutes, then run knife around edges and turn out on wire rack to cool.

Oven time may vary - you know your oven best. This batter also makes great muffins and mini loaves, and these have much shorter baking times. I LOVE the cinnamon in this bread and literally dump a ton in it.

I know it's hot out right now in many places, but nothing makes the house smell better than fresh baked banana bread!
